Damn, What's This Bitch Been Eating???

I know it's been a minute, and inquiring minds want to know, what have I been eating. I have been a tad busier lately and unable to really clock some kitch time. Not to worry though, the nerd food is still in full effect. This dish is a simple, healthy, and well balanced spring delight. I cooked some basmati rice, then steamed some zucchini, shredded carrot, & corn on top once the rice was about 80% ready. In a separate pan, I simmered and lightly seasoned some black eyed peas. Bam roasted, you're done!

Broccoli & Cheddar Quiche

Hello good people! I know it's been a minute now, I've been busy but I'm getting back in the habit. I have managed to keep cooking and taking photos. {Word!} Last week, I made a very simple, very delicious broccoli cheddar quiche. And mes amis, it's goes a little something like this:

4 Eggs
1 cup of any kind of milk you wanna use. {1/2 & 1/2 is recommended but who wants to die of a heartache at 50? I used soy milk.}
A few dashes of salt
A few dashes of garlic
A few dashes of oregano
1/2 - 2/3 of a cup of chopped brocc
3/4 of a cup of shredded cheddar
1 whole wheat pie pan {No time to make it from scratch, but hey you feel free to!}

Basically, you stir 1-5 together in a medium size bowl, layer the brocc & cheese in the pie crust, then pour the egg mixture on top, bake for 350 degrees for at least 45-50 minutes. Oh so easy & fantastic with a salad.
